My little birthday boy, Rett, turned 2 on the 1st. We hosted a train themed birthday and created a cake by using a video hosted on the Betty Crocker website. I jus

t discovered these videos and really recommend them! They have all kinds of cakes and it really wasn't all that difficult (especially when your husband puts the cake together!)

This is what our cake ending up looking like. The kids were VERY impressed and several parents asked if we made it ourselves.

Once you create something like this, you always have some pointers for other people that may decide to recreate the same thing. For starters, the recipe calls for 1 box of cake mix. This makes loaves that are WAY too small. Then I made a loaf with a full box and it ran all over my oven. So my suggestion is to buy 2 cake mixes and make a thing of 6 muffins to go along with each one.

So what does this have to do with Christmas? Well after making this TOTALLY fun cake I think this would be a wonderful tradition to do with Polar Express one night!
